New Year's Day Goat Cheese Quiche
Hurray, it’s 2016! The New Year always brings a refreshed sense of hope, new beginnings and goals for the year ahead. Personally, I am so excited to continue to cook with wonderful nonnas and bring good, family recipes to you from different countries all over this world.
Hopefully, you celebrated with a bang last night and today you are resting, spending time with your loved ones and making some good food to start the year off right.
This quiche is perfect for those of us that just want to roll out of bed after staying up late, heat up something delicious and curl up on the couch with a hot cup of coffee. You can make this quiche days in advance, and simply heat it up in the oven at a moments notice. Now that’s what I call a Happy New Year!
New Year's Day Goat Cheese Quiche
Makes
Serves
Prep time: Total time:
One refrigerator ready pie crust
1 bunch asaparagus, ends removed
4 oz goat cheese
3 eggs beaten
1 ½ cup heavy cream
½ cup whole milk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground nutmeg
- Preheat oven to 375 degrees
- Cut up the asparagus in 1 inch pieces. Saute in an oiled, hot skillet for three to five minutes until the asparagus begins to soften and brown. Season with salt and pepper. Remove from heat.
- Roll out crust into a pie dish and break up goat cheese and spread on the bottom of the dish. Sprinkle the asparagus over the cheese.
- Beat eggs, cream, milk, salt, pepper and nutmeg in a large bowl and carefully pour into the pie crust. If the asparagus moves to one side, make sure to redistribute it around the dish.
- Bake for 45 to 50 minutes until eggs no longer move when the dish is tilted.
- Allow to cool for 15 minutes. Serve hot or at room temperature.
Buon Appetito!
