#Thursday Trend Spot: Fruit Toast, The Next BIG Thing?
In the age of Twitter and Instagram the term ‘trending’ has become quite a, well, trend. We all are trying to keep up with what’s the latest and greatest in fashion, sports, Kim Kardashian and even the foods we eat. Every month when numerous food periodicals show up in my mailbox it seems like everyone is cooking the same thing at the exact same time.
If you ask your grandmother about avocado toast she might give you a cross eye yet over the past few years it seems that every blog, food site and Instagrammer has come up with their version of two very simple ingredients. Avocado. Toast.
Well, if you are still eating Avocado toast for breakfast you are SO last year my friend. The new breakfast, lunch and dinner staple is still toast but now with fruit. And, to make it even more fancy, make sure to slather some ricotta cheese on the bread first.
I hate jumping on any bandwagon but I must admit, its pretty good. And, it’s nice to take a break from egg white omelets. Wait, those are so 2005 anyway! Get creative, change up the fruit, cheeses and even the canvas. I like a nice hearty whole wheat and/or ciabatta is also nice. Just make sure to toast the bread up to a golden brown because the higher you can pile the toppings, the better.
Cherry Ricotta Toast

4 slices multigrain bread
8 ounces ricotta
¼ cup honey
2 tablespoons olive oil
1 teaspoon kosher salt
1 cup fresh cherries, pitted
2 sprigs fresh oregano
- In a medium skillet, heat olive oil to medium heat and toss in oregano springs. Once bubbling, add cherries and salt and shimmy the pan until the cherries begin to release their juices. Turn off the heat and set aside.
- Toast the bread and slather with ricotta while still warm. Spoon cherries over the ricotta evenly over the four pieces of bread. Garnish with thyme (optional).
Peaches & Cheese Toast

4 slices ciabatta
4oz goat cheese
4 oz cream cheese
2 peaches, sliced thin
4 mint leaves.
2 teaspoons kosher salt
- Toast ciabatta bread. Mix goat cheese and cream cheese in a small bowl until fully blended. Spread cheese mixture over warm bread.
- Top with peaches and mint leaves.
