Cherry Nut Thumbprints
Thumbprints are a classic cookie that can be filled with various jams or chocolate. Mine are super nutty with really compliments the buttery, crispy cookie.
Makes 3 dozen cookies
1 cup salted butter, softened
1/2 cup confectioners sugar + more for dusting
1 large egg, room temperature
1 tsp almond extract
2 cups AP flour
1 teaspoon kosher salt
1 cup hazelnuts
1/2 cup almonds
1/2 cup cherry jam
Preheat oven to 325 degrees. In a food processor pulse the nuts until finely ground. Remove 1/2 cup and reserve. Add the butter, confectioners sugar, egg, extract to the food processor and pulse to combine. Add the flour and salt and mix again until completely mixed.
Shape the dough into 1 inch balls and place them 1 inch apart on a parchment lined baking sheet. Press a deep indentation into the center of each using a wooden dowel.
Bake for 13 minutes, until bottoms are golden brown. Remove from the pan to a wire rack to cool. Fill with jam and dust with a bit more sugar.
